Paneer Kulcha and Raitha

Ingredients for dough:


Maida 2 cups
Ghee 2 tbsp
Fresh or dry yeast 1 tsp
Sugar 1 tsp
Salt 1/2 tsp


Directions:

# Mix yeast, sugar and 3 tbsp of warm water together. Cover and keep aside for 5 minutes.
# Mix salt, maida, ghee and the yeast mixture to make a firm dough adding a little water if required. keep aside for 3 hours.


Filling ingredients:


Mashed paneer 1 1/2 cups
Chopped green chillies 4
Chopped coriander leaves few
Turmeric powder pinch
Garam masala powder 1/4 tsp
Salt 1/2 tsp
Amchoor 1/2 tsp


Directions:


# Mash paneer and mix all the ingredients well and form into small balls.
# Fill into larger balls made from the dough. Roll out and fry with ghee like parathas.


Raitha:


# Grind 2 green chillies and 12 mint leaves into fine paste. Mix 2 boiled and mashed potatoes, 1 1/2cups beaten curds, 1/2 cup cream, the paste and 1/2 tsp salt.
# Heat 1 tabs ghee and 1/4 tsp jeera. When it splutters pour over the raitha.
